Zucchini Bread

2 cups flour or whole wheat flour - 1 cup vegetable oil
2 tsp. baking soda - 1 1/2 cups sugar
1/4 tsp. baking powder - 2 tsp. vanilla
1 tsp. salt - 2 cups grated zucchini
3 tsp. cinnamon or pumpkin pie spice - 1 cup raisins
3 eggs - 1 cup chopped nuts

Mix dry ingredients, except sugar. Combine eggs, oil, sugar, zucchini and vanilla in a large bowl.
Beat until well mixed. Stir in flour mixture until smooth. Add raisins & nuts. Bake in greased loaf
pan at 350 degrees for 40 minutes. Cool in pan on cake rack.
